The Locorotondo comes from grapes “Verdeca and” Bianco d’Alessano”, picked, selected and vinified using the most rational winemaking techniques. White wine of straw color, the taste is dry, fresh and harmonious. It gives the best of himself in the first year of production. It prefers the appetizers, seafood and fine dining. It should be opened the moment and served chilled at 8 ° – 10 ° C.
A Dark Red Wine, ruby red in colour. A light aroma, vinous and of a dry but soft taste. It has a full body and is produced with grapes from the primitive vines. It is recommended with roasted red meat and sapid dishes. To be served at room temperature. Uncork the bottle at least one hour before.
It was the typical wine which could be mixed, alcoholic and dense, once the pride of Puglia. An historical wine, somewhat distant from modern tastes, which prefer selected and scented wine. Today the Primitivo covers an important role also in modern tastes; with time they have tried to mix it in small quantities and particulars in order to change it, soften it and therefore make it a great wine which is now widespread in most parts of Europe, heading towards milestones which are no longer far away.
The wine we propose is a particular red wine that is vinified through a soft pressing and a long maceration. The fermentation is carried out in steel at controlled temperature while the aging is done first in steel for six months, then in oak barrels of second pass for about six months and finally in the bottle for a period of six months. The wine is red with deep intensity, an intense and persistent scent and a moderately tactical flavor in youth. We recommend the combination with red meats.
